I always ask people to soak rice before cooking. At least an hour for hand-pounded rice and 30 minutes for basmati rice. The reason is, rice tend to absorb arsenic more readily than any other food crops. Soaking and cooking the rice on stove-stop (instead of pressure cooker) opens up the grain and allows arsenic and other toxic stuff to escape.
White Basmati rice has lower level of arsenic and hence less time for soaking is fine provided the rice is Organic. That does not mean we can safely choose basmati rice all the time. Basmati rice is polished and hence lack in good nutrition but easy to digest.
Hence having basmati rice for dinner(some people should avoid even this) or as a rejuvenating food after an illness is good. For lunch, choose the nutritious hand-pounded rice by soaking it well before cooking. After soaking, cook the rice using draining method. Yet another most important step to
avoid excess starch and to digest the rice better.
Always try to choose organic products whenever available. Boiled rice water helps in Vitamin B12 absorption. To gain that benefit, cook the rice by soaking and draining method and again, choose organic. If you are following a very good Ayurvedic diet, you don't have to worry about little bit of arsenic or any other heavy metal that enters into your body by drinking rice boiled water. Your immune system will take care of it.
